This salsa recipe is easy to make and so delicious!

It's not authentic, but it definitely hits the spot.

I discovered this recipe back in 2020, deep into quarantine when Pioneer Woman posted the recipe on TikTok. I made it right away and it has become a staple in my life ever since.

I love to make it when friends come over and the recipes makes so much that I end up having enough to last me the rest of the week.

28 oz diced tomatoes, strained

1 can Rotel

1/2 diced onion

1-2 sliced jalapeños

Juice of 1/2 a lime

Handful of finely chopped cilantro

Spoonful of minced garlic

Salt and pepper to taste

Spoonful of sugar

INSTRUCTIONS

Strain 28 oz of diced tomatoes
Add one can of Rotel, one half diced onion, one to two sliced jalapeños, juice of one half a lime, a handful of finely chopped cilantro, a spoonful of minced garlic, salt plus pepper to taste, and a spoonful of sugar.
Blend to your desired consistency.
Chill in fridge for 30 min before serving.
