Ingredients:

  • 3 chicken breasts
  • 3 tablespoons cornstarch
  • Salt, pepper, garlic powder, and paprika (to taste)
  • Olive oil
  • 1 jar of PF Changā€™s Sesame Chicken sauce
  • Carrot sticks
  • Edamame (microwaveable)
  • Trader Joeā€™s frozen rice

How to make this easy weeknight dinner:

  1. Prepare the Chicken: Start by cleaning and drying three chicken breasts. Once theyā€™re ready, cut them into bite-sized pieces and place them on a baking sheet.
  2. Coat the Chicken: Sprinkle three tablespoons of cornstarch over the chicken pieces. Season generously with salt, pepper, garlic powder (the more, the better!), and a touch of paprika. Toss everything together until the chicken is evenly coated. This step is key for getting that crispy, delicious texture.
  3. Drizzle and Bake: Drizzle the coated chicken with a little olive oil and give it another good mix. Spread the chicken out evenly on the baking sheet. Bake in a preheated oven at 375Ā°F (using the air fry setting if available) for 12 minutes.
  4. Stir and Add Sauce: After 12 minutes, take the chicken out and give it a stir. To keep things simple, I used a jar of PF Changā€™s Sesame Chicken sauce, but feel free to make your own if youā€™re up for it! Pour the sauce over the chicken and mix well.
  5. Add Veggies: Add some carrot sticks directly on top of the chicken and pop it back in the oven for another 6 minutes. For a veggie boost, microwave some edamame to serve on the side.
  6. Serve and Enjoy: Once the chicken is done, it should be perfectly crispy and coated in that savory sesame sauce. Serve it over a bed of Trader Joeā€™s frozen rice, and top with the cooked edamame and extra sesame sauce if you like it saucy.

And thatā€™s it! A quick, flavorful, and easy one-pan dinner thatā€™s sure to become a weeknight favorite. Enjoy!
